Method:
In a saucepan place oil and garlic let it cook for 2 minutes, add salt, tomato, spices and tomato paste, stir over heat then add water and bring to boil, lower heat and leave to cook until it is reduced.
Heat oil and fry the eggplants, potatoes and jalapeños separately.
Leave to cool.
Place the fried vegetables on a plate as shown in photo, top it with sauce and leave the jalapeños for the end.
