sunflower seeds bread .... الخبز الاسمر ببذور عباد الشمس
Ingredients:
3 cups sunflower seed flour 1 cup white bread flour 2 Tbsps. dry active yeast ¼ full fat milk ¼ cup vegetable oil 1 Tbsps. salt 1.5 cup warm water Method: mix together yeast and milk and set a side for 5 mins till foamy. in the bowl or your electric mixer, using the dough hook, mix the dry ingredients ( flours and salt ) well then start adding the oil, milk and yeast mix, gradually add the warm water till it forms a playable dough that is slightly sticky but doesn’t stick your hand, knead it for about 8 mins, form it as a ball and cover with a plastic wrap to double in size ( about 1.5 hours ). After the dough has doubled in size, start kneading it by squeezing the top of it out then rolling it back in, repeat this for like 5 mins, divide it into 2 equal size balls, put each ball on your baking pan, apart with 5 cm coz they will double in size, dust with white flour and cover with plastic wrap and set aside for 1 hour. Heat the oven to 200C, put a baking dish full of boiling water on the bottom of your oven, leave it inside for 10 mins to create some steam. Using a sharp knife decorate your bread the way you desire, place them on the top rack inside your oven for 20 mins then reduce the temperature to 180C, lower the rack to the middle of your oven and bake for another 20 mins. Leave the bread to cool on a wire rack. |
Notes :
The more you knead your bread dough the more you get a fluffy bread coz you allow the gluten inside the flour to develop.
Creating a steam inside the oven is the secret of having a rough crunchy bread surface.
Pay attention to your water inside the oven not to completely evaporate
